Hello Everyone!

Yes, it’s been a very long time since I last posted. Thank you to all my fans who have stuck with me. I will continue to blog about things that inspire me including animal rescue, couponing, fitness, healthy eating, vegan recipes, and share an occasional craft.

172413_Green Bags_KDM_With the holidays fast approaching, I thought I’d share a recipe I made this week for Chia Seed pudding. It is definitely some new, but also something I’ve wanted to try for awhile. Guess what? I liked it! Since I’ve made it, I inspired two others to make it and they reported to like it as well. It’s a great, healthy, and slightly sweet pudding.


3/4 cup Chia seeds (I use Nutiva white chia seeds)

2 cups almond (or other nut milk)

2 tsp stevia or other sweetener (i like agave)

3/4 tsp vanilla

For a chocolate version, add 3-5 tbsp cocoa powder

Combine all ingredients and let sit 20-30 mins or until turns to a pudding consistency. Make sure to stir every 5 minutes until pudding is set. Try adding fruit when serving!
